Well regarded all over Asia for his noodles, this man needs to tools beyond his hands and fingers.
Joseph took us to a small stall in Chinatown for lunch. The waitress remembered him from when he came before – a considerable time ago. On the walls were hundreds of pictures of the chef and his guests while he tossed and spun the dough. According to this mysterious art, he was able to take a ball of dough and form thin noodles with his bare hands – quite a performance. You can see the spirals in the picture that that will form the noodles.
